How to Use a Pellet Grill for the First Time
Two things have to happen before you cook anything, and skipping either one is why some first meals taste wrong.
By Mike M. · Last updated November 6, 2026 · How we pick
How do I start my pellet grill for the first time?
Do the burn-off before any food goes on: fill the hopper, prime the auger, run the empty grill at 350°F for about 30 minutes and then at maximum for another 15-30, with the lid closed. This cures the paint and internal coatings. Skip it and the first meal tastes of chemicals.
The steps, in order
- 1
Assemble it properly and check the probe wiring
Assembly is a genuine two-person job on most full-size grills and takes an hour or more. The one step people rush is the temperature-probe wiring to the controller — a loose connector there produces wild temperature readings that get blamed on a faulty controller. Seat it firmly.
- 2
Fill the hopper with good, dry pellets
Use food-grade BBQ pellets, never heating pellets. A competition blend is the right first bag — forgiving and suits everything. See best wood pellets for smoking.
- 3
Prime the auger
The auger tube is empty from the factory, so the first ignition has no fuel to light. Most grills have a prime function or you simply run the start-up cycle and wait — you will hear pellets dropping into the burn pot. Do not assume a failed first ignition means a faulty igniter; it usually means an unprimed auger.
- 4
Run the burn-off: 350°F for 30 minutes, lid closed
Nothing on the grates. This burns off manufacturing oils and begins curing the high-temp paint inside the chamber. You will see smoke and smell it — that is the point.
- 5
Then run it at maximum for 15-30 minutes
Finishing hot completes the cure and burns out anything the first stage missed. On a Pit Boss, leave the Flame Broiler closed for this.
- 6
Let it run its cool-down cycle
Most current grills have an automatic shutdown cycle that keeps the fan running to clear the burn pot. Let it finish rather than pulling the plug — stopping it mid-cycle leaves unburned pellets in the pot, which causes a messy next ignition.
- 7
Cook chicken thighs at 375°F
Cheap, forgiving, quick, and they tell you how your particular grill behaves at a mid temperature. Pull them at 175°F internal. Do not start with brisket.
How long does it take to start a pellet grill?
From cold, 10-15 minutes to reach a smoking temperature and a little longer to reach maximum. The sequence is: igniter heats, auger feeds, pellets catch (you will see white smoke), fan brings the chamber up.
The white smoke at the start is normal and lasts a minute or two. If it is still billowing after five minutes, the fire has not caught properly — turn the grill off, let it cool, clear the burn pot of unburned pellets, and start again. Lighting a pot full of pellets is how you get a flare-up.
Your first three cooks, in order
| Cook | Temperature | Time | What it teaches you |
|---|---|---|---|
| Chicken thighs | 375°F | ~45 min | How your grill behaves at mid heat; skin needs heat |
| Baby back ribs | 250°F | ~5 hours | Patience, and what pellet smoke actually tastes like |
| Pork shoulder | 250°F | 8-12 hours | Hopper capacity, the stall, and resting |
Brisket after those three. It is the most expensive cut and the least forgiving, and there is no reason to learn on it.
The three first-week mistakes
- Opening the lid constantly. Every lid-open costs recovery time and pellets. Use a leave-in thermometer instead.
- Leaving pellets in the hopper between cooks. The hopper is outdoors and vented. Pellets absorb moisture, crumble and jam the auger. Empty it via the cleanout or store in a sealed bin.
- Not cleaning the burn pot. Ash restricts airflow and causes the temperature swings people blame on the controller. See how to clean a pellet grill.

Questions people actually ask
Do I need to burn off a new pellet grill?
Yes. Run it empty at 350°F for about 30 minutes, then at maximum for 15-30 more, lid closed, before any food goes on. It cures the paint and internal coatings. Skipping it makes the first meal taste of chemicals.
How do I start a Pit Boss pellet grill for the first time?
Fill the hopper with BBQ pellets, prime the auger so the tube has fuel, set 350°F and let the start-up cycle run. Burn off empty for 30 minutes, then at maximum for 15-30, then let the cool-down cycle finish.
How long does it take to start a pellet grill?
10-15 minutes from cold to a smoking temperature. A minute or two of white smoke at the start is normal; if it is still billowing after five minutes the fire has not caught — shut down, clear the burn pot, and restart.
What should I cook first?
Chicken thighs at 375°F. Cheap, forgiving, quick, and they show you how your grill behaves before you risk an expensive cut.
How do I prepare pellets for the pellet feeder?
Just make sure they are dry and intact — snap one, and it should break cleanly rather than bend or crumble. If there is a layer of sawdust at the bottom of the bag, do not use it: fines are what jam augers.
