Can You Sear on a Pellet Grill?
Yes, with a caveat that depends entirely on your grill. And the free technique that gets most people most of the way.

Can you grill on a pellet grill?
Yes — every pellet grill here grills, and most reach 450-500°F. What they do badly is sear: a pellet grill circulates convection heat rather than exposing food to flame, and convection browns far more slowly than radiant heat at the same temperature. A Pit Boss with a Flame Broiler slider is the exception.
Why 500°F is not enough
A pellet grill is a convection oven. Heat rises off the burn pot, hits a solid deflector plate and circulates around the chamber. The food never sees the fire.
Browning depends on energy transfer at the surface, and radiant heat from flame transfers far more energy per second than circulating hot air at the same temperature. That is why a 500°F pellet grill makes a weaker crust than a 450°F charcoal kettle, and why the number on the controller is a poor guide to searing ability.
The three ways to fix it
1. A direct-flame slider (Pit Boss Flame Broiler)
A sliding plate in the heat deflector. Pull the lever and part of the grate is exposed to open flame, which Pit Boss rates to 1,000°F at the grate. That is genuine searing hardware.
It appears on almost every Pit Boss barrel, including the cheapest 500 FB2. No Traeger has an equivalent at any price. If steak is a weekly event, that one feature may decide your brand.
2. Thermal mass: sear grates or cast iron
Interlocking anodized sear panels absorb chamber heat, store it, and conduct it directly into the meat on contact — which is exactly what convection cannot do. A cast iron griddle does the same thing more heavily, with full-contact browning.
Either costs a small fraction of the price step to a grill that sears. See sear kits and griddles.
3. The reverse sear, which costs nothing
- 1
Smoke the steak low
225°F until the internal temperature is about 15°F below your target. For a medium-rare target of 130°F, pull at around 115°F. This is where the pellet grill is at its best — gentle, even, and smoky.
- 2
Rest it briefly and crank the grill
Take the steak off and set the grill to maximum, or open the Flame Broiler if you have one. Give it the time it needs to get genuinely hot — rushing this step is why reverse sears fail.
- 3
Sear 60-90 seconds a side
Dry the surface with a paper towel first; a wet surface steams instead of browning. Then straight on, 60-90 seconds a side, and off.
- 4
Serve without a long rest
The low phase has already done the work a rest normally does. A couple of minutes is plenty.
This uses the pellet grill for the thing it is best at and limits the part it is worst at to three minutes. It is the single most useful technique on this site for anyone who already owns a grill that will not sear.
Can you grill normally on a pellet grill?
Yes — burgers, sausages, chicken, vegetables all cook perfectly well at 375-450°F. What you notice compared with gas is a longer warm-up (10-15 minutes rather than five) and less aggressive browning.
For burgers specifically, a cast iron griddle on the grate transforms the result: full-contact browning and the fond stays with the meat. Smash burgers on a pellet grill are genuinely good.
Can you use a griddle on a pellet grill?
Yes. A two-sided cast iron plate gives you flat and ribbed surfaces. One caveat: a solid plate blocks convection airflow, so the grill runs hotter directly above it and cooler elsewhere. Leave space around the plate rather than covering the whole grate.
See griddle combos for the full picture, including why a plate beats a combo cart for most buyers.

How it scores
Weighted rubric score: 8.4/10. Value carries the most weight on this site by design. On our published scale that is 9.6/10.
What it does well
- 932 sq in for well under four figures — roughly 20% more grate per dollar than the closest Traeger
- 30 lb hopper is double what most sub-$500 grills carry, so overnight cooks do not need a refill
- Flame Broiler slider gives you direct-flame searing, which most pellet grills in this range cannot do
- Two probes in the box rather than one
Where it falls short
- LCD controller is a step below the touchscreen PID on the 1300/1600 and the Advantage 850SL
- Pit Boss app has a long history of connection complaints in owner threads
- Assembly is a genuine two-person, ninety-minute job
#2 · First pellet grill on a tight budget

How it scores
Weighted rubric score: 7.9/10. Value carries the most weight on this site by design. On our published scale that is 9.1/10.
What it does well
- Full-size 518 sq in chamber for close to what a portable costs
- Flame Broiler lever opens direct flame for searing up to 1,000°F — rare at this price
- Five-year warranty is unusually long for a budget grill
Where it falls short
- 5 lb hopper is the real compromise: expect to refill on any long smoke
- No connectivity at all
- Thin-gauge body loses heat in cold weather, so winter cooks run longer
#3 · Portable searing and camping
Cuisinart 8-in-1 Portable Pellet Grill
Cuisinart · score 8.7/10

Reaches 500°F in a 40 lb portable with a sear zone — hotter than any Traeger portable, for less money.

Questions people actually ask
Can you sear a steak on a pellet grill?
Properly on a Pit Boss with the Flame Broiler slider open. Poorly on an indirect-only grill capped at 450-500°F — but sear grates, cast iron or a reverse sear all close most of the gap.
Can you grill normally on a pellet grill?
Yes. Burgers, chicken, sausages and vegetables all cook well at 375-450°F. The differences versus gas are a longer warm-up and less aggressive browning.
Can you use a griddle on a pellet grill?
Yes — a cast iron plate works well for eggs, smash burgers and onions. Leave space around it rather than covering the whole grate, because a solid plate blocks convection airflow.
Can you grill on a Traeger without pellets?
No. Pellets are the fuel — without them there is no heat at all. The grill needs electricity for the auger, fan and igniter, but the heat comes entirely from burning wood.
What is the hottest a pellet grill gets?
500°F is the practical ceiling on the grills we cover. Pit Boss rates the exposed flame through an open Flame Broiler at up to 1,000°F at the grate, which is a different and much more useful figure for searing.
