Sear Grates and Griddles for Pellet Grills

Searing is the one thing pellet grills are genuinely weak at. Two accessories fix it for far less than a grill that sears properly costs.

Why a pellet grill sears badly

A pellet grill is a convection oven. Heat comes off a burn pot, hits a solid deflector plate and circulates — so the grate rarely sees direct flame. Convection heat at 450-500°F browns far more slowly than radiant heat at the same temperature. The fix is thermal mass between the fire and the food.

Sear grates (GrillGrate)

Interlocking anodized aluminum panels with raised rails. They absorb heat from the chamber, store it, and conduct it directly into the meat on contact — which is exactly what a convection grill cannot do on its own.

The practical effect is that a 450°F Z Grills or Traeger brands a steak properly. The panels we list are universal and fit grills 15 inches deep and up, which covers every barrel grill on this site.

The trade-offs: you lift them in and out, they take time to come up to temperature, and on a very small grill the depth requirement rules them out.

Cast iron griddle

Heavier, slower, and better for edge-to-edge contact. A two-sided plate gives you flat (eggs, smash burgers, onions) and ribbed (grill marks) surfaces in one piece.

The Pit Boss 10 x 20 inch plate fits across most barrel grates. Cast iron needs seasoning and must be kept dry, and it is heavy enough to be awkward when hot — but it does things no grate can.

The airflow caveat on cast iron

A solid plate across the grate blocks convection airflow, so the grill runs hotter directly above the plate and cooler elsewhere. That is fine for a deliberate griddle cook and bad if you are trying to hold an even chamber temperature.

Leave space around the plate rather than covering the whole grate, and expect the grill to behave differently while it is in.

The free fix: reverse sear

Before buying anything, try the technique. Smoke the steak at 225°F until it is roughly 15°F below your target internal temperature, pull it, bring the grill to maximum, and put it back on for 90 seconds a side.

That uses the pellet grill for the thing it is best at — gentle, even, smoky cooking — and limits the part it is worst at to three minutes. It costs nothing and it works. On a Pit Boss, open the Flame Broiler for the finish and you barely need an accessory at all.

Full method: can you sear on a pellet grill.

Or buy the grill that sears

Pit Boss’s Flame Broiler slider exposes direct flame rated to 1,000°F, on almost every barrel they sell including the cheapest. If you have not bought yet and steak is a weekly event, that is the cheaper answer than a grill plus accessories. See best pellet grills for searing.

Questions people actually ask

Are GrillGrates worth it on a pellet grill?

On a 450°F grill with no direct flame, yes — they are the cheapest route to a real crust and cost far less than upgrading the grill. On a Pit Boss with a working Flame Broiler they are much less necessary.

Can you use a cast iron griddle on a pellet grill?

Yes. A two-sided plate gives you flat and ribbed surfaces. Leave space around it rather than covering the whole grate, because a solid plate blocks convection airflow.

What is a reverse sear?

Smoke the steak at around 225°F until it is roughly 15°F below your target internal temperature, then sear it hot and fast. It uses the pellet grill for what it does well and limits the searing phase to a few minutes.

Will sear grates fit my grill?

The universal panels we list are specified for grills 15 inches deep and up, which covers every barrel grill on this site. Tabletop and portable grills are often too shallow.
